Apart from the non veggie food, the Americans are also fond of vegan food. Vegan food boosts up the energy level and also maintains the good health. Most of vegan food helps control the cholesterol, sugar level of the body.
Lets start with the ingredients.

♧ Ingredients:
* 5 tomatoes diced
* 1 onion chopped
* 125 g basil leaves
* 1 cup boiled kidney beans
* 1 tsp lemon juice
* 2 tbsp olive oil
* 1/2 tbsp cumin powder
* 1 tbsp cooking oil
* 2 springs of rosemary
* 1 tsp pepper powder
* salt to taste
* loaf of fresh sourdough bread
* 700 g fresh spinach
* 1 cup boiled chickpeas
* 3 medium sized potatoes diced into large chunks

Friends today I have two special kind of recipes one is called Tzatziki and second is Skordalia. It is  a Greek cuisine. Very easy to prepare. These are healthy dip. Tzatziki and Skordalia both are served with pita bread or slother.
Lets start first with tzatziki.

πŸ’Ž Tzatziki Recipe:

Greek cuisine tzatziki is simply made of yogurt, cucumber, olive oil, fresh herbs, garlic, and lemon juice. It is called as sauce or dip. Tzatziki is creamy but still its light as its made of yogurt and not like cheese or mayonnaise

* 2 cups grated cucumber
* 2 tbsp olive oil
* 1 1/2 cup plain greek yogurt
* 1 tbsp chopped fresh mint
* 1 tbsp lemon juice *  salt to taste

Today my blog has slight different kind of recipe. Called Crumpets  - its a traditional breakfast/brunch taken in United Kingdom.
Homemade fluffy crumpets, golden brown buttery treats and its undoubtedly delicious with melted cheese.
Cooking time 50 mins Makes: 10 -12 Resting time: 35 min.
Lets start with the ingredients for making crumpets.
πŸ’Ž Ingredients for crumpets: * 2 tbsp unsalted butter melted * 2 tsp sea salt * 2 tsp caster sugar * 2 1/2 tsp dried yeast * 250ml warm milk * 470 g plain flour * 1/2 tsp baking powder dissolved in 70ml warm water * oil to grease * cheese to serve

Its easy to prepare at home.
Cooking time: 30 mins Resting time: 15 mins
Lets start with the ingredients.
πŸ’Ž Ingredients for yorkshire pudding: * 250 gm self raising flour * 1/ 2 tsp bakingi powder * 300 ml soya milk ( unsweet) * 100 ml warm water * 2 tbsp cooking oil
πŸ’Ž Process for yorkshire pudding:

Pre heat oven to 220°C gas and 200°C fan . Take a large jug and whisk the flour,  baking powder, soya milk, water and salt all together. It should be a smooth batter without any lumps. Set aside for rest for 15 mins.
Spoon a tsp of oil into 12 holes muffin tin and place in oven for 5 mins. to get really hot. Remove tin from the oven  and carefully pour the batter into hot oil tin. Return to oven and bake for 25-30 mins until its risen and turned golden brown.
Hot vegan yorkshire pudding is ready to serve.

Preparation time: 20 min. Cooking time : 10 mins. Baking time: 17 to 20 mins. Serving: 4 person
♧ Ingredients: * 2 cups boiled macaroni * 1 tsp butter * 1 tbsp refined flour/ maida * 1 cup milk * 1 cube grated cheese * 1/2 tsp pepper powder * 1/2 pineapple pieces * 1/2 cup parmesan grated cheese * 1 tsp bread crumbs

Take a thick bottom pan heat butter and roast refined flour. Add slowly milk and stir  continuously while adding milk in order to avoid lumps.

In this situation of lockdown, we need to choose from whatever available at home. I was just thinking that and it came to my mind, the green moong dal pancakes.
Its easy recipe with less ingredients. It can be taken in brunch. So lets start.
Pre-Preparation time: 3 hrs Cooking time: 25 mins Resting time: 30 mins.
Ingredients: * 2 cups split green moong dal * 1 tsp pepper powder * 7-8 garlic pieces * 1/2 frozen peas ( optional) * salt to taste * 1 tsp cumin powder (jeera) * 1/4 tsp eno * 1 tsp schezwan sauce * oil for roasting
Pre-preparation: Soak moong dal in a lukewarm water for 2.5 to 3 hours. After 3  hrs add moong dal, peas and garlic in mixi jar. Grind them to paste, add some water to grind but be sure it should not become thin paste. Consistency should be medium thick paste so it can be spread on pan for making pancakes.

Today I am going to share a very delicious and instant recipe, its creamy salad of cucumber and tomato recipe.
Its a very quick and easy recipe, and the ingredients are basic which remains available at home.
Preparation time: 10 mins. Serving: 3 people 
Lets start with the ingredients.
Ingredients: * 3 medium size tomatoes chopped * 2 juicy cucumber (kheera) chopped * 1 onion chopped * 1 tbsp corriander leaves  * 1 cup sour cream or greek yogurt * 1 tsp lemon juice  * 1/2 tsp pepper powder  * salt to taste  * 1 tsp oregano  * 1 tsp chilli flakes
Process: Take a big bowl. Put chopped tomatoes, cucumber and onion in it. 
In another small bowl, whisk together sour cream or greek yogurt, pepper, salt, oregano, chilli flakes, lemon juice. Pour on the chopped vegetables in the big bowl.
Mix it and toss gently to coat. Garnish it with corriander leaves. The delicious cucumber and tomato salad is ready.

It is important to understand the nutritional value of the food when we prepare. Hence today I have a great recipe which is Immune Boosting Recipe - Mango Pudding.
Nutritional Value: Mango, the king of fruits has great nutritional value. Mangoes are rich in many vitamins, minerals and antioxidants. 
They are a good source of vitamin A, C , vitamin B6 and folic acid. Also contains magnesium and potassium and boosts immune system.

Ingredients: * 300 ml milk * 200 ml fresh cream * 1 mango peeled, cit and pureed * 3 1/2 tbsp sugar * 2 tbsp custard powder  * 1/2 cup small cubes of mangoes for garnish 

Process: Take a bowl, assemble all the ingredients and blend it with blender. It should be smooth and there should not be any lumps.

Soaked Chickpeas for Salad - Sprouted Checkpeas

Sometimes it happens that soaked chickpeas for a day before gives a bad smell. Do not worry there is a solution for it.
Just wash the chickpeas and remove the washed water. Repeat this again. So washing the soaked chickpeas will remove the bad smell.
Now you can use this chickpeas either in vegetable or as salads.
Here we will prepare sprouted chickpeas for salad. Lets get  started.

Ingredients:
* 1 cup white chickpea sprouted 
* 1 tbsp chopped onion 
* 1 cup chopped tomatoes
* 1/2 cup chopped capsicum
* 1/4 cup choppdd carrot
* 1 tbsp finely chopped raw mango (optional)
*1 tbsp lemon juice
* 1/4 tsp pepper powder
* 1 tsp chaat masala 
* 2 tsp oregano
* 1/4 tsp cumin powder 
* 1 tbsp corriander leaves
* 1/2 pomogranate 
* 1 tsp green chilli paste 


Pre-Preparation:
Chickpeas is already soaked for a day, now after washing it with water , drain the water and tie them in a clean cotton cloth for 2 days. Sprinkle water twice in a day.
